Diet Recipe – Steamed Ling over Spinach
Ingredients (Serves 2):
1 garlic crushed
140 grams washed baby spinach – leave to drain in a colander while you prepare the rest of the ingredients.
1 tablespoon olive oil
1 teaspoon salt
4 ling fillets
1 lemon sliced
Steps:
In a large oven tray spread out the spinach evenly. Mix the salt and olive oil together. Drizzle very sparingly through the spinach – saving some for the fish. Then rub oil sparingly over the fish. Place the fish on the spinach. Decorate the fish with slices of lemon. Bake in a heated oven for 15 minutes at 180 degrees Celsius.

Healthy Treat Recipe — Guilt-free Chocolate Cupcakes
Dry Ingredients:
1 cup of rice flour, or gluten free flour
1⁄4 cup of buckwheat flour
3 tablespoons cocoa
1 teaspoon of baking powder
Pinch of salt
Wet Ingredients:
1⁄2 cup skim or soy milk
1 teaspoon apple cider vinegar
2/3 cup agave nectar, or maple syrup
1/3 cup sunflower oil or macadamia oil
1 teaspoon vanilla extract
Steps:
Measure and sieve dry ingredients in a bowl. Then mix wet ingredients in another bowl. Mix the wet and dry. Spoon the mixture into lined muffin tin and bake in oven for 18 minutes at 160 degrees Celsius. Leave them to cool before icing.
Icing:
