      1 Spoon the Chicken Salad (see recipe on this page) into the silicone cup and place it in the top left corner of the bento box.

      2 Cut a thin slice from the side of the apple. Cut a butterfly shape from the slice with a cutter. If desired, use one of the anti-browning techniques on page 65 to keep the apple looking fresh. Place the apple butterfly on top of the Chicken Salad cup.

      3 Stack the butterfly crackers in the lower left-hand corner of the bento box.

      4 Thread three grapes onto each of three toothpicks. Place the grape sticks in a single layer in the upper right corner of the box.

      5 Cut two flower shapes from the Havarti cheese and two small circles from the cheddar. Insert the flower-stem picks into the flower shapes. Place the cheese circles in the middle of the flowers. Put the flowers on top of the grapes.

      6 Fill the remaining space with the raspberries.

      Breakfast for Lunch

      Having breakfast at lunchtime is a novelty that kids love. Put together some tiny waffle sandwiches, then pair them with a sausage, nuts, and fruit.

      INGREDIENTS

      ½ banana

      Blueberries

      Glazed walnuts

      4 frozen mini waffles (shop bought or homemade)

      Peanut butter

      Fully cooked chicken apple sausage

      EQUIPMENT

      Two-tier bento box

      Round silicone baking cup

      Variations If you don’t have mini waffles on hand, a regular waffle cut small will also make a lovely sandwich. You can also skip the waffles altogether and use silver dollar pancakes instead. I often make pancakes on weekends and I’ll usually make a few tiny ones to have on hand for later in the week. You can store the pancakes in the fridge for a few days or pop them into a zip-top bag and place them in the freezer for up to a month. To reheat, place them in a toaster oven while they’re still frozen and heat until warmed through.

      1 Cut the tip off the banana. Stand the banana on end in one tier of the bento box and cut a chunk of banana the same height as the bento box. Cut a thin slit in the peel of the banana to make it easy to peel and place it back in the box. Reserve the rest of the banana for the waffle filling.

      2 Fill the silicone cup with the blueberries and place it in the same tier as the banana. Fill any remaining space with the glazed walnuts.

      3 Toast the frozen mini waffles according to the package directions, then allow them to cool a bit. If you can avoid putting the waffles in the bento box while they are still warm they are less likely to be soggy at lunchtime.

      4 Spread one mini waffle with peanut butter. Add two or three thin slices of banana, then top with a second mini waffle. Repeat the process to make a second sandwich. Place the sandwiches in the second tier of the bento box.

      5 Cook the sausage in a small skillet until it is just browned. If you are using a fully cooked sausage, you can skip this step, but it does add a bit of flavor to the meat. Slice the sausage, allow it to cool, and put it in the remaining space in the bento box.
