Greek yoghurt with walnuts and honey
Some taste combinations are especially wonderful when you try them locally – for instance, special cheeses, hams, or sauces and mustards. But, when you enthusiastically bring them back home with you, you are disappointed to discover that without the appropriate atmosphere, or sun, or other mystical ingredient characteristic of their home country, they lose all their charm. However, Greek yoghurt, with walnuts and honey, is perfect in any climate, although, naturally, it has the most magical effect when eaten during the summer, in a sunny garden.

1 LITRE UNFLAVOURED YOGHURT WITHOUT THICKENER
4 TBSP FRESH HONEY
20 LIGHT WALNUTS
IF YOU WISH, YOU CAN ALSO ADD FRESH BILBERRIES, RASPBERRIES, STRAWBERRIES AND CHOPPED FRUIT; MELON AND WATERMELON ARE ALSO VERY GOOD
GARNISH WITH MINT OR BALM LEAVES, PANSIES OR ROSE BLOSSOMS.
Greek yoghurt is thick, like proper whipped cream. To achieve this, you just have to strain our local natural yoghurt. If you strain 1 litre, you will get half a litre of a thick, creamy substance. Take a large strainer and line it with a coffee filter (two layers of paper towelling will also work). Pour in the yoghurt and let it stand and strain into a pot for 3 to 4 hours, in a cool place. Divide the sweet morsels left in the strainer into dessert bowls, stir in some berries or fruit (but delicious even without these!), sprinkle on some chopped walnuts, and pour on the honey. Serve, garnished with eatable flower petals, and mint or balm leaves. A picturesque taste treat!
⇒ You can make genuine Greek yoghurt from any fresh local yoghurt that has no additives. Thus, Pajumäe, Esko and Nopri farm yoghurts are quite suitable. And drink the remaining liquid, or use it for preparing food, since it is filled with wholesomeness!
⇒ If possible, use organic nuts. Those sold in ordinary stores are often bitter due to additives, and will ruin the dessert. Or, try soaking the nuts overnight, since this will improve matters. The best nuts are those you get directly from the growers – in southern markets – and it’s worth bringing them back home, as a gift for yourself!

Külastasin Türgit siis, kui kõik tuttavad olid seal juba ammu käinud. Neile oli väga meeldinud ja mulle meeldis ka. Olime Türgi presidendi kaasa Hayrünnisa Güliga juba nende Tallinna visiidi ajal tuttavaks saanud ja riigivisiidil Ankarasse ootas meid suisa kodune vastuvõtt. See riik on täis põnevaid kontraste. Minu elavaim mälestus on pärit päevast, mil Arvo Pärdile anti „Aadama itku” maailma esiettekande eel toimunud pidulikul tseremoonial Istanbuli Hagia Irene (Püha Rahu) muuseum-kontserdisaalis üle Istanbuli muusikafestivali elutööpreemia. Sealsamas naabruses seisis 1700 aastat tagasi ehitatud Hagia Sophia – tollal maailma suurim pühakoda, kus võib tänapäeval imetleda sõbralikult kõrvuti seismas nii islami kui ka kristluse sümboleid. Selle inimliku hoole ja religioonide vabaduse muuseumi kõrval elab aga oma vilgast elu kuue minaretiga Sinine mošee. Kutsung palvele toob reedeti pühamusse kuni 15 000 usklikku. Istanbul on maailmalinn ja kultuuride kokkusaamise paik. See ühe jalaga Euroopas ja teisega Aasias seisev metropol on paik, kuhu rännumees lihtsalt peab minema. Ning türklaste valget imemaitsvat ja ainult neile teada oleva retsepti järgi tehtud juustu igatsen ikka ja jälle uuesti proovida. Turkey
With its population of 72.56 million and 92.3 people per square kilometre, Turkey is a powerful major power.
I visited Turkey long after all my friends had already been there. They had really liked it there, and so did I. I had become acquainted with Hayrünnisa Gül, the wife of the Turkish president, during their visit to Tallinn, and on our state visit to Ankara, I was greeted by a truly homey reception. This country is filled with interesting contrasts. My most vivid memory is from the day when, at a formal ceremony in the concert hall in Istanbul’s Hagia Irene (Holy Peace) Museum, Arvo Pärt received a prize for his lifework before the world premiere of his Adam’s Lament at the Istanbul International Music Festival. In the vicinity, stood the Hagia Sophia, built 1,700 years ago – the world’s largest house of worship at the time – where, today, we can marvel at Islamic and Christian symbols standing in friendly proximity. The Blue Mosque, with its six minarets, lives its lively life next to this museum of human caring and religious freedom. On Fridays, the call to prayer brings up to 15,000 believers to the sanctuary. Istanbul is a world city; a place where cultures meet. With one foot in Europe, and the other in Asia, this metropolis is a place that every traveller should visit. And time and again, I long to try the Turk’s very delicious white cheese that is made according to their secret recipe. Lemon and parsley is a Turkish taste combination that is easy to try at home. Afiyet olsun!
Lahana Dolmasi elik kapsa- või viinamarjalehe rullid
Dolmad on armastatud suupisted nii türklaste kui ka kreeklaste laual. Kui Istanbulis koka käest just türgilikku omapära välja uurida püüdsin, vastas ta toidukunstnikule kohaselt: „Sa võid tegelikult igasugu asju sinna lehe sisse keerata. Peaasi, et oleks värske. Meie Türgis kasutame tihti viinamarjalehtede asemel hoopis kapsast – see on ju ka teile omasem?” Ja lisas juurde juba kulunud soovituse: „Poest ostetud dolmasid ärge parem proovigegi. Pealegi – neid on lihtne teha, eriti koos hea seltskonnaga!”
